Sweet Potato Red Curry
This quick, satisfying and warming meal is great for these cold winter days we’ve been having. Double the recipe for easy stow-away lunches this week. This has been adapted from a role model in the medical field of mine, Aviva Romm MD’s Facebook post. It’s great for the low energy, over-worked individual. Enjoy!
Ingredients:
- 2 large sweet potatoes, peeled, chopped
- 2-3 boneless, skinless chicken breast, chopped
- 2 onions, diced
- 2 red peppers, diced
- 2 cans coconut milk
- 1 Tbsp red curry paste
- 1 in. piece ginger
- 1/4 tsp red pepper flakes
- 2 Tbsp coconut oil
- salt to taste
Directions:
- Cook chicken in coconut oil.
- Add vegetables, along with the coconut milk and spices. Cook for 30 minutes.
- Serve over rice or enjoy on it’s own. Makes 4-6 servings.
