All I can say is YUM!! These moist brownies are such a delight. They even got the skeptical hubby stamp of approval. If you are looking for a gluten-free brownie or a healthier version of your favourite treat, this is it. These brownies are also a source of fibre, B vitamins and protein. Black Bean Brownie Recipe

-1 (15.5oz or just under 2 cups) can black beans, rinsed well and drained
-3 eggs
-3T olive oil
-1/4 cup cocoa powder
-1 pinch salt
-1 tsp baking powder
-1 tsp vanilla extract
-3/4 cup white sugar (I substituted with honey, just under 3/4 cup as honey is sweeter)
-1/2 cup dark chocolate chips (optional)

Directions

1. Preheat oven to 350 degrees F. Lightly grease an 8×8 square baking dish.

2. Combine the black beans, eggs, olive oil, baking powder, cocoa powder, salt, vanilla extract, honey in a blender; blend until smooth; pour the mixture into the prepared baking dish. Sprinkle the chocolate chips over the top of the mixture.

3. Bake in the preheated oven until the top is dry and the edges start to pull away from the sides of the pan, about 30 minutes.
