Here is a quick and tasty stir fry sauce that you can prepare while your rice and vegetables are cooking. For a simple and filling dinner, I prepare brown basmati rice, chop a variety of vegetables and fry in a bit of coconut oil. Add 1 cup chickpeas or protein of choice. Combine ingredients for the sauce and add it to the stir fry in the final 5 minutes of cooking on med-high heat. Stir regularly.
Ingredients:
2 Tbsp sesame oil
4 Tbsp tamari sauce (or soy sauce if not GF)
3 Tbsp maple syrup
2 Tbsp almond butter
2 Tbsp lime juice
1/4 tsp garlic salt (or 2 cloves garlic, crushed)
For the peanut butter lovers out there, switch out the almond butter for it. This meal tastes great as a leftover the next couple of days. Will keep well for about 3 days. Enjoy!
